From a food truck to the iconic Rainbow Room in Manhattan—Aarthi Sampath is the interpreter of Indian food

Aarthi Sampath, who is only in her 30’s, has been a short-order cook on Kukree, a food truck that she owned with a partner in Seattle and outside which long lines of foodies used to form, for a taste of her innovative food.
She’s also been the chef at two noted Michelin star Restaurants, Junoon and Breslin, where she introduced Indian touches into the British menu.
